Summer "Salsa"

Here's a new take on a salsa that adds a unique kick to grilled chicken or fish.

Ginger Lime Salsa
1/3 C sour cream
1 mango, peeled and diced
1/2 cucumber, peeled and diced
2 Tbl. fresh lime juice
1 tsp. grated ginger root
1/2 tsp. cumin
dash of cayenne pepper
fresh chopped cilantro, parsley, chives

Wisk together the sour cream, lime juice, ginger, and spices. Gently fold in remaining ingredients. Chill before serving.
