For Mother's Day, we paid honor to a couple of our senior surrogate mothers. Using utensils was an issue, so we designed our menu accordingly and came up with a great dish for Mac and Cheese. We scoured the Web for recipes and adapted one from Martha Stewart. Here it is:
Rich and Creamy Mac and Cheese
1 16 oz. package noodles of your choice (cooked aldente)
1 stick butter (divided)
3/4 C flour
2 C milk
1/4 C sour cream
3 C freshly grated white cheddar cheese
2 C freshly grated romano cheese
Parmesan Cheese
cubed fresh vienna bread
salt, pepper, nutmeg to taste
cubed ham (optional)
Melt 2 Tbl. butter, place in bowl. Add bread and parmesan cheese. Use fingers to coat bread.
Melt remaining butter in fry pan with high sides. Warm milk. Add flour to butter and wisk. Slowly add warm milk. Continue to wisk until thick. Add sour cream and grated cheeses. Add noodles, spices and ham. Place in casserole dish. Top with bread cubes. Bake at 375 degrees for 30 minutes.
